Fasting Raffaello candy (video recipe)
Raffaello candies are always an inspired choice for a but or a special event. Many people prepare them at home, from natural ingredients.
The classic recipe is usually prepared with dairy products, but there are also variant of post, just as successful. The one we present to you in this article can be used as sweet and nutritious snack, for both adults and children.
The candies contain only vegetable ingredients and are sweetened with banana and honey. So, they are healthier than the traditional ones, since they have no sugar at all.
Raffaello fasting balls - recipe
The ingredients are easily accessible. Coconut oil can be purchased from health food stores. It is optional in this recipe, but it helps to strengthen the composition and gives the candies a more intense coconut taste, specific to these delicacies.
• 1 banana
• 3 tablespoons coconut oil
• 200 g of cashews
• 100 g of honey
Grind the cashews in a blender until they become flour. Process the same with coconut, if you want it to be finer.
Pass the banana in a bowl with a fork until it becomes a paste. Add honey and coconut oil. Stir to mix. incorporate the cashew flour and coconut flakes and mix.
If the composition is too soft, add more coconut until it thickens and can be shaped. Let it sit in the fridge for 20 minutes, then form balls and finish them with coconut.
In the middle you can add a hazelnut, an almond or a small dried fruit, such as raisins, blackcurrants, cranberries, goji, etc.
Keep them in a saucepan in the refrigerator. After being cold, they harden better, thanks to coconut oil, which becomes solid at low temperatures.

These candies remind me of the famous Raffaello candies, although there is still a long way to go to find their identical taste. Until then, I leave you with this extremely simple recipe, for all coconut lovers, like me anyway. They don't end up on Raffaello candies, but they are something else, tasty and they end as you would say, I can guarantee that!
150 g coconut + 3-4 tablespoons
1 can of condensed milk (397 g)
50 g peeled and fried almonds
Method of preparation:
Heat over low heat, condensed milk together with diced butter.
When the butter is melted, turn off the heat, add the coconut (I gave it through the grinder). Stir until smooth, leave to cool, then refrigerate for 1 hour. After this time, small balls are formed, in the middle of which a fried almond is inserted.
1. Grease a fairly large pot with a tablespoon of oil.
2. Put the pot on the fire, heat it over low heat and then pour the condensed milk at once.
3. Then add the whole amount of grated coconut and mix vigorously.
4. Place the mixture on the work table greased with the other tablespoon of oil, cut and then shape each piece between the palms and pass through the coconut.
✽ Add 20 g of unsalted butter to the composition of condensed milk and coconut flakes. The candy composition will become softer and easier to shape.
✽ For a special taste, add vanilla essence and 1 tablespoon or two of coconut liqueur.
✽ Put hazelnuts or almonds in the center of each candy to make them tastier. The hazelnuts should not be salted, and before putting them in candies, you can bake them for a few minutes in the hot oven.
How to make a recipe for homemade fondant candies with walnuts, coffee, cocoa or coconut?
Ingredients for fondant candies
I made 1 kg of homemade fondant.
I weighed the walnut kernel and the coconut flakes. For a more intense flavor, lightly fry the walnuts and coconut in two dry pans over low heat. Just brown very little and develop its flavor. Be careful not to burn them! Then I put them to cool in 2 bowls.
Coconut butter and cocoa butter harden in the jar in which they are stored, so in order to use them we must heat them.
We put the jars in a bowl with hot water, we can even put them in a bowl with water on low heat to become liquid faster. In a bowl we put coconut flakes (I used dry flakes but you can use freshly grated coconut, I think it would have a much stronger aroma). Pour the coconut butter and cocoa butter over and mix. Add the sweetener or sugar if you want a sweeter dessert.
Put the composition in a bowl that you have previously covered with cling film. The composition should be about 2-3 cm thick. We press it with the back of a spoon well and level it. Let it cool and wait for it to harden. When it is cold, make the chocolate icing: heat the chocolate together with the butter or milk over a low heat, in the microwave or in the bain marie and pour over the coconut. Cool, remove from the pan, cut and serve cold. Store in the refrigerator covered with cling film.
- for 24 pieces of approx. 15 g one
- 200 g coconut (lightning)
- 140 g condensed milk
- 100 g dark chocolate (or milk)
In a bowl put the coconut and condensed milk.
If you can't find condensed milk to buy, you can prepare it according to the recipe here (click).
Mix very well with a spoon until the two ingredients are homogenous.
With wet hands formed balls of the desired size. I made them of about 15 grams one and I came out with 24 pieces.
Melt the chocolate in a steam bath or microwave and let it cool a bit. You can use milk chocolate or even white chocolate (but they will be very sweet) if you don't like dark chocolate.
Glaze each ball with chocolate and place them on a baking sheet or on a grill, then let them cool to harden the chocolate.
After about an hour they are just good to enjoy. Enjoy!
* For extra flavor you can add your favorite flavor.
*In the middle of each candy you can put a fried hazelnut, almond or pieces of dried fruit.
*If you are not a fan of chocolate, you can dress them in coconut flakes immediately after shaping them.
